We just discovered Udi's GF pizza crust and we love it! We had tried a GF cheese pizza from a local pizzeria in our town, but it didn't agree with Tootsie. The first time we ordered, we asked for very light sauce, but that didn't agree with Tootsie. We tried it again with no sauce and it still gave her a tummy ache so we decided pizza wasn't an option for her. Until we found this crust that is! Then it was the question, "What do we put on it?" I read on a Facebook group that some kiddos do okay with plain tomato paste. I was a little nervous to try it since everything else I've read said it is high in fructose and should be avoided...but we gave it a go.
I used a spatula to spread the tomato paste very thin across the crust. Just enough to give it some color - then topped it with monterey jack cheese. Tootsie LOVED it and wanted to eat the whole thing. I let her eat half. Didn't want to overdo it. She had the second half the following day and didn't have any tummy complaints! Hallelujah!
